The method involves quantification of glucose in acid-hydrolyzed samples after enzymatic digestion with exo-1,3-beta-glucanase and beta-glucosidase and subtraction of the contribution of glucose from alpha-glucans, free sucrose and glucose, as reported by McCleary and Draga (J AOAC Int. 2016 Mar-Apr;99(2):364-73). In this release, data for beta-glucan in mushrooms, except Agaricus bisporus (white button, crimini, portabella) have been replaced with results from analysis using the updated protocol which has trehalase enzyme added to the protocol, addressing potential overestimation of β-glucan content in samples containing trehalose (K-YBGL, 08\/23. Previously K-YBGL, 11\/19). Values for Agaricus mushrooms were not updated due to low levels of beta-glucan and no difference beyond analytical uncertainty resulting from the modified procedure.",
